- 1 lb turkey sausage (sliced into ½-inch rounds)

- 1 yellow bell pepper, sliced
- 1 orange bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Directions
- Prep the Veggies:
Wash and slice all your vegetables. Keep them in uniform sizes for even cooking. - Heat the Skillet:
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. - Cook the Sausage:
Add the turkey sausage slices. Sauté until browned and cooked through, about 5–7 minutes. Remove from the pan and set aside. - Sauté the Veggies:
Add the remaining tablespoon of olive oil. Toss in the onions and bell peppers first, sautéing for about 3 minutes. - Add the Rest:
Add zucchini, cherry tomatoes, and seasoning. Stir well and cook for another 5–7 minutes, until vegetables are tender but still vibrant. - Combine & Finish:
Return the sausage to the skillet. Toss everything together and cook for 2–3 minutes more to meld the flavors. - Serve:
Garnish with fresh parsley if desired and serve hot—on its own or over rice, quinoa, or cauliflower rice.
