A vibrant quinoa side dish full of fresh veggies and zesty flavor that’s quick and simple
Ingredients

- 1 cup quinoa (any color you like)

- 2 cups vegetable or chicken broth (for more flavor)

- 1 small cucumber, diced

- 1 cup cherry tomatoes, halved

- ½ red onion, finely chopped

- ½ cup crumbled feta cheese (optional but worth it!)

- ¼ cup fresh parsley, chopped
-
- 2 tablespoons extra-virgin olive oil

- 1 tablespoon lemon juice

- Salt & pepper, to taste
Instructions
1. Cook the Quinoa

- Rinse quinoa under cold water to remove any bitterness.

- In a saucepan, combine quinoa and broth. Bring to a boil, cover, then simmer on low for 15 minutes until liquid is absorbed.

- Remove from heat, fluff with a fork, and let it cool slightly.
2. Prep the Veggies

- While quinoa cooks, dice cucumber and tomatoes.

- Chop red onion and parsley.
3. Toss Everything Together

- In a large bowl, combine quinoa, cucumber, tomatoes, onion, feta, and parsley.

- Drizzle olive oil and lemon juice over the mix.

- Season with salt and pepper. Stir it gently until everything is well coated.
4. Chill or Serve

- Serve it warm for a cozy side dish or chill in the fridge for 30 minutes if you’re prepping ahead.
