Ingredients
For the Filling:

- 8 ripe peaches (about 3 pounds), sliced

- ¼ cup granulated sugar

- 2 tablespoons fresh lemon juice

- 2 tablespoons cornstarch

- 1 teaspoon vanilla extract

- ½ teaspoon ground cinnamon

- ¼ teaspoon ground nutmeg
For the Crisp Topping:

- 1 cup old-fashioned rolled oats

- 1 cup all-purpose flour

- ¾ cup packed brown sugar

- ½ cup unsalted butter, cold and cubed

- ½ teaspoon salt

- 1 teaspoon ground cinnamon
Instructions

Prep the Peaches
Preheat oven to 350°F (175°C). Peel peaches using the blanch-and-shock method, then slice into ½-inch wedges. -
Make the Filling
Toss sliced peaches with sugar, lemon juice, cornstarch, vanilla, cinnamon, and nutmeg until evenly coated. -
Prepare the Topping
Mix oats, flour, brown sugar, salt, and cinnamon. Cut in cold butter until crumbly with pea-sized bits. -
Assemble the Crisp
Spread peach mixture in a 9×13-inch dish and sprinkle topping evenly over it without pressing down. -
Bake
Bake for 40–45 minutes until golden and bubbling. Cover loosely with foil if browning too quickly.

Cool and Serve
Let cool for 15 minutes. Serve warm with vanilla ice cream or whipped cream.
