Description
These Mac and Cheese Bites are crispy on the outside, creamy on the inside, and paired perfectly with oven-roasted broccoli. They’re ideal as a fun appetizer, kid-friendly snack, or a comforting side dish.
Ingredients
For the Mac and Cheese Bites:
- 2 cups elbow macaroni
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup milk
- 1 ½ cups shredded sharp cheddar cheese
- ½ cup grated Parmesan cheese
- 1 egg, beaten
- Salt and pepper to taste
- ½ tsp garlic powder (optional)
- ½ cup breadcrumbs (for topping or coating)
- Cooking spray or oil (for greasing the pan)
For the Roasted Broccoli:
- 1 large head of broccoli, cut into florets
- 1 ½ tbsp olive oil
- Salt and pepper to taste
- ½ tsp garlic powder or lemon zest (optional)
Instructions
- Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Cook macaroni until al dente, drain, and set aside.
- Make the Cheese Sauce:
- In a saucepan, melt butter over medium heat. Add flour and whisk to form a roux.
- Slowly add milk while whisking until smooth. Let simmer and thicken, about 3–4 minutes.
- Stir in cheddar and Parmesan cheese. Add salt, pepper, and garlic powder.
- Combine and Shape:
- Mix cheese sauce with cooked pasta. Let cool slightly, then mix in the beaten egg.
- Spoon mac and cheese into a greased mini muffin tin. Press down to compact slightly.
- Sprinkle with breadcrumbs and lightly spray with oil.
- Bake the Bites:
- Bake at 375°F (190°C) for 15–18 minutes, or until golden and set.
- Let cool for a few minutes before removing from tin.
- Roast the Broccoli:
- While bites are baking, toss broccoli with olive oil, salt, pepper, and optional garlic powder.
- Roast on a baking sheet at 425°F (220°C) for 20–25 minutes, until crisp-tender and slightly charred.
- Serve Together:
- Serve warm mac and cheese bites alongside the roasted broccoli for a fun, balanced meal.
