Ingredients

- 1 lb fresh or frozen crawfish tails

- 12 oz fettuccine pasta

- 2 tbsp unsalted butter

- 1 medium onion, diced

- 2 garlic cloves, minced

- 1 cup heavy cream

- 1 cup grated Parmesan cheese

- 1 cup shredded cheddar or Velveeta cheese

- 1 tsp Cajun seasoning

- 1/2 tsp paprika

- Salt and pepper to taste

- Optional: 1 diced jalapeño for extra spic
Instructions
1. Prepare the Crawfish

- If using frozen crawfish tails, thaw and pat dry.

- Season lightly with Cajun seasoning and set aside.
2. Cook the Fettuccine

- Bring a large pot of salted water to a boil.

- Cook fettuccine according to package instructions until al dente.

- Drain and toss with a drizzle of olive oil to prevent sticking.
3. Make the Sauce

- In a large skillet, melt butter over medium heat.

- Sauté diced onion and garlic until fragrant.

- Add heavy cream, Parmesan, and cheddar cheese. Stir until melted and smooth.

- Season with Cajun seasoning, paprika, salt, and pepper.
4. Combine and Cook

- Stir in seasoned crawfish tails and simmer for 5–7 minutes.

- Toss in the cooked fettuccine until fully coated with the sauce.

- Optional: Add diced jalapeño for a spicy kick.
5. Garnish and Serve

- Garnish with freshly chopped parsley and a sprinkle of Parmesan.
